In "The Rise of Christianity," Rodney Stark makes an interesting argument that the bulk of Hellenized Jews (not to mention Gentile "God-fearers") actually converted to Christianity. But maybe that is too simple. Just one thought: when you mentioned the special role of Jews in salvation history, I couldn't help but think of the fundamentalist/dispensational premillennailists view of the role of the Jews in the rapture/apocylpse.
